Crock-pot Paleo Minestrone Soup

The days are getting shorter and cooler which calls for hot soups, leggings and slipper boots.Three of my favorite things about fall. There are plenty of others but these are the top 3!

I am a huge fan of minestrone soup but have a hard eating pasta so I love this verision of minestrone soup. It’s hearty and warms ya to the bones. Best part- it goes in the crock-pot.

Buffalo Chicken Lettuce Wraps

My mom and I started the 21 Day Fix yesterday and I am already craving junk food, especially buffalo wing dip. Oh how I want to dip some tortilla chips in it and have the grease run down my face. Okay, that may be exaggerating a little bit but not much.

This version is 21 Day Fix approved and it totally hit my craving. I used romaine leaves as “taco” boats and topped with a little blue cheese crumble. Blue cheese is another weakness of mine. Well really any cheese. As Monica said in Friends, “I wish I could live in a house made out of cheese.” Brilliant line and I so wish it was possible.

Anyways…here is the recipe 🙂 Oh and I apologize for the paper plate. This was today’s lunch at work and I was too hungry to make it look pretty.

What You’ll Need:

4) boneless chicken breasts

2) 5oz Plain Greek Yogurt containers (I used store brand from Wegmans)

1 cup hot sauce (I chose Frank’s Red Hot) – add more if you like to live on the wild side

1 tsp miced garlic

1 tsp garlic powder

1 tsp onion powder

Pinch of black pepper

What To Do:

Place chicken breasts in the bottom of your crockpot

Pour Greek Yogurt and hot sauce on top

Add your garlic and spices

Give it a stir to make sure the chicken is covered thoroughly

Cover and cook on low 3 to 3 1/2 hours. I checked at 3 hours and it was still pink so I added another 30 minutes

Take 2 forks and shred the chicken

Eat and enjoy!

3/4 cup chicken = 1 red container

3 lettuce boats with celery & carrot sticks on the side (you have to have celery & carrots with buffalo wings) = 1 green container

You could substitute whole grain crackers or pita for the lettuce boats, that would be a yellow container

I added blue cheese crumble for 1 blue container
