Gluten Free Granola

I used to eat chicken sausage and veggies every day for breakfast as I do not eat eggs. After doing a diet analysis project for my Nutrition class, I decided that I needed to give up the daily chicken sausage and opt for gluten free granola with almond milk. I went shopping for bagged granola and was so upset seeing all of the additives that really should not be consumed. I decided to make my own instead and the outcome was great! It is a very easy recipe and you can get everything in the bulk section without spending an enormous amount of money.

What You’ll Need:

3 cups of gluten free rolled oats

1/2 cup sliced almonds

1/2 cup pecan pieces

1/4 cup sunflower seeds

1/4 cup chia seeds

1/2 cup flax seed meal

1/2 tsp sea salt

1/3 cup pure honey

3 tbsp coconut oil

1/2 tsp vanilla extract

What  To Do:

Preheat oven to 350 degrees and line a cookie sheet with parchment paper

Combine all dry ingredients into a medium sized bowl

In a small saucepan, combine honey and coconut oil over low heat

Once honey/coconut is combined remove from heat and add vanilla

Pour onto dry mixture and mix well

Pour onto baking sheet and spread evenly

Cook for 5 minutes. Remove, flip mixture over, and cook for another 5 minutes

Once granola is lightly browned remove from oven and let cool

Break granola into pieces, store in airtight container

Enjoy in yogurt or almond milk, or even eat plain.

Mango Pineapple Smoothie

It was a scorching day here in NY today and after running errands, a yoga class and cooking for the week; all I wanted was something sweet and refreshing but still borderline healthy.

I always loved those Mango Pineapple smoothies from McDonald’s but over the last few years I have refused to buy another item from that chain. I stay away from pretty much all fast food chains besides Chipotle and Panera. Anyways, this recipe was refreshing and totally hit the smoothie craving I had been looking for all with staying borderline Paleo.

What You’ll Need:

1 Frozen Banana

1/2 cup Frozen Mango Chunks

1/2 cup Fresh Pineapple

1 Coconut Milk Yogurt Cup

1 Cup Orange Juice

1/2 Cup Water

4 Ice Cubes

What To Do:

Put all ingredients into a blender or Ninja. Combine until smoothie like. If you like it more “liquidy” you can add more water or OJ. If you like it thicker, add more ice.

Drink, enjoy, and pretend your on a tropical island!

Sweet Potato Brownies

I have been looking for a brownie recipe that was more like a brownie and less like cake. I have 2 other Paleo “brownie” recipes that I make regularly and they are more like a cake then a brownie. These are by far my favorite. So incredibly chocolaty and chewy! This recipe will be staying in the rounds!

What You’ll Need:

1 cup Sweet Potato, roasted and mashed

3 eggs, beaten

1/4 cup Maple Syrup ( I used Agave) – add another 1/8-1/4 cup if you want a bit sweeter

1 tsp Vanilla

1/4 cup Palm Shortening, melted

1/2 cup Cacao Powder

1/2 cup Almond Meal

1/4 tsp Baking Powder

1/2 tsp Sea Salt

1/4 cup Enjoy Life Mini Chocolate Chips , plus more for sprinkling (optional)

 

What To Do:

Preheat oven to 350 degrees

Mix wet ingredients in a medium bowl

Mix dry ingredients  (except chips) in a small bowl, then add to wet ingredients

Stir to combine

Fold in mini chocolate chips

Line 9×9 with non-stick foil or spray ( I used melted coconut oil)

Sprinkle on more chocolate chips

Bake for 30 minutes or until the edges have started to pull away and a toothpick come out clean

Let cool, cut, eat, and enjoy

Keep in fridge.

“Elvis” Cookies

These cookie have three of my most favorite ingredients, Chocolate Chips, Bacon, and “Peanut Butter” (well actually Almond Butter). They are soft and chewy and I love the little surprise of bacon that sneaks in. The King would be very impressed! 🙂

What You’ll Need:

2 small mashed bananas

1 cup of sunflower seed butter (I used Almond Butter instead- amazing)

1/3 cup honey (I used Agave Nectar)

1 egg, whisked

1 tsp vanilla extract

1/4 tsp cinnamon

1/2 tsp baking soda

1/;2 baking powder

Pinch of sea salt

1/2 cup Enjoy Life Chocolate Chips

3 strips of bacon, cooked and diced

What To Do:

Preheat oven to 350 degrees. Line a baking sheet with parchment paper

In a medium bowl, mix together all ingredients except bacon and chocolate chips. I used my hand mixer.

Fold in chocolate chips and bacon

Spoon mixture onto baking sheet, about 2 inches apart. Note: using almond butter made the mixture liquidy, however they thickened up when in the oven.

Bake 18-20 minutes or until golden brown

Let cool before removing from baking sheet.

Eat and Enjoy!

Paleo Zucchini Sticks

My favorite veggie is Zucchini. I would eat it every day if I could. I love that there are so many ways you can cook with it so when I found this recipe I was beyond psyched! This would make a great snack or an appetizer at a get together. Pair it with your favorite tomato sauce and you’ll have a winner.

What You’ll Need:

1 Medium Zucchini

2 Eggs

2 Tbsp Olive Oil (or coconut oil)

3 Tbsp Almond Meal

1/2 Tbsp Garlic Powder

1/2 Tsp Salt

What To Do:

Preheat oven to 425 degrees

Line a baking sheet with foil

Spread a thin layer of oil on the foil using a brush or paper towel

Slice Zucchini into match sticks

Dry off any extra moisture of Zucchini with a paper towel

Crack and beat an egg in a shallow dish

In another shallow dish, combine almond meal, garlic powder, and salt. (You may need to add more depending on how thick you coat the sticks.)

Coat the Zucchini in egg and then in the flour mixture.

Lay out zucchini on the baking sheet

Bake 12-14 minutes

Turn over and then bake another 12-14 minutes

Eat and enjoy

Don’t Cave In: Paleo Zucchini Sticks

Clean Eats – Orange Julius

Who doesn’t love to treat themselves to an Orange Julius every now and then, but how about if you could make it at home? I found this recipe from Cassey over at Blogilates! It has been the perfect mid afternoon treat for me.

What You’ll Need:

1 Banana Sliced and Frozen

1/2 Orange Juice (I used the Simply Orange)

3/4 Unsweetened Almond Milk

Handful of ice

What To Do:

Combine all ingredients into a blender or Magic Bullet

Blend until smoothie like

Drink and enjoy!

 

Paleo Taco Seasoning

Never buy the Taco Seasoning packets again when you probably have all of the spices in your cabinets! This recipe is a win in my book because I love making turkey lettuce wraps. Super easy to make ahead of time and keep in your cabinet for whenever you need it! Best part, NO ADDITIVES!

What You’ll Need:

1/2 Tsp Red Pepper Flakes

2 Tbsp Chili Powder

1 1/2 Tbsp Cumin

1 1/2 Tbsp Paprika

1 Tbsp Onion Powder

1 Tbsp Garlic Powder

2 Tsp Oregano

What To Do:

Combine all ingredients in a small bowl and shake or stir well.

Store in an air tight container.
