Gluten Free Granola

I used to eat chicken sausage and veggies every day for breakfast as I do not eat eggs. After doing a diet analysis project for my Nutrition class, I decided that I needed to give up the daily chicken sausage and opt for gluten free granola with almond milk. I went shopping for bagged granola and was so upset seeing all of the additives that really should not be consumed. I decided to make my own instead and the outcome was great! It is a very easy recipe and you can get everything in the bulk section without spending an enormous amount of money.

What You’ll Need:

3 cups of gluten free rolled oats

1/2 cup sliced almonds

1/2 cup pecan pieces

1/4 cup sunflower seeds

1/4 cup chia seeds

1/2 cup flax seed meal

1/2 tsp sea salt

1/3 cup pure honey

3 tbsp coconut oil

1/2 tsp vanilla extract

What  To Do:

Preheat oven to 350 degrees and line a cookie sheet with parchment paper

Combine all dry ingredients into a medium sized bowl

In a small saucepan, combine honey and coconut oil over low heat

Once honey/coconut is combined remove from heat and add vanilla

Pour onto dry mixture and mix well

Pour onto baking sheet and spread evenly

Cook for 5 minutes. Remove, flip mixture over, and cook for another 5 minutes

Once granola is lightly browned remove from oven and let cool

Break granola into pieces, store in airtight container

Enjoy in yogurt or almond milk, or even eat plain.

Crock-pot Paleo Minestrone Soup

The days are getting shorter and cooler which calls for hot soups, leggings and slipper boots.Three of my favorite things about fall. There are plenty of others but these are the top 3!

I am a huge fan of minestrone soup but have a hard eating pasta so I love this verision of minestrone soup. It’s hearty and warms ya to the bones. Best part- it goes in the crock-pot.

What You’ll Need:

1 Sweet Potato – diced (I left the skin on but you can peel)

1 Cup Carrots- diced

1 Medium Onion – diced

1 Zucchini – diced

1 Yellow Squash – diced

 2 Cloves of Garlic – minced

32oz Vegetable Broth

2- 14 oz cans of diced tomatoes

1/2 cup Frozen Spinach

2 Bay Leaves

2 tsp Oregano

1 tsp Basil

1 tsp Parsley

1/4 tsp Cayenne Pepper

1/4 tsp Sea Salt

1/4 tsp Black Pepper

1 pound Grass Fed Beef

What To Do:

Chop up your veggies and place in your crock-pot

Pour vegetable broth on top

Add diced tomatoes

Add frozen spinach and spices

Stir everything together and place bay leaves on top

Cook on low for 8 hours

At 7 hours cook ground beef and add to the crock-pot

Remove bay leaves before serving

Eat and enjoy

Like pasta? Simply add a small pasta like Acini Di Pepe or Ditalini to crock-pot 30 minutes prior to serving!

Almond Butter and Jelly “Milk” Shake

I am a huge fan of making my chocolate shake before going to bed. I decided to sweeten it up a little bit with organic jelly. The result was AH-MAZ-ING! No need to hit up the ice cream shop when you can easily and cheaply make it for yourself any time you want it. I always make sure I keep the ingredients on hand in case I get that craving.

What You’ll Need:

1) Frozen Banana

3) Ice Cubes (or more if you like your milkshake really thick)

2 tsp Almond Butter

2 tsp Organic Jelly (I used raspberry)

Cocoa Powder – couple shakes (I used Hershey’s Dark Cocoa)

Almond Milk

Sprinkles are a tasty option

What To Do:

Put everything in a blender or ninja and combine thoroughly

Drink and enjoy

Primal Pepperoni Pizza Casserole

I made this over the weekend for my mom, aunts, and friends. We have an annual garage sale and I offered to cook a lunch. I wanted to try and remain semi healthy and when I found this recipe I instantly knew it needed to be made. It went over so incredibly well, that I will be making it next week on vacation. My picky brother even liked  it, he actually finished all the leftovers. Hahaha.

(Sorry about the picture. Usually I would have it plated, but like I said it went quickly. 🙂 )

What You’ll Need:

1 lb grass fed ground beef

8 oz of pepperoni

2 cups of your favorite pasta sauce (I use Wegmans’s Organic Grandpa Goes Vegetarian- no added sugars)

4 cloves of garlic

1 small onion

1 tsp oregano

1 tsp italian seasoning (Not in orginal recipe- I added)

1 tsp sea salt

1 tsp fresh cracked pepper

2 eggs

1/2 cup mozzerella cheese (Not in orginal recipe- I added)

Couple shakes of parm cheese (Not in orginal recipe- I added)

4 cups of roasted spaghetti squash noodles

What To Do:

Roast the spaghetti squash: cut the spaghetti squash in half and scrape out the seeds, place face down on a baking sheet lined with parchment paper. Drizzle 2-3 tablespoons around the edges of the spaghetti sqaush and roast in a 375 degree oven for 30-40. When done, remove from oven, let cool and use a fork to scrape out the noodles.
Preheat oven to 400 degrees.

In a large skillet over medium heat, saute the ground beef, ½ of the pepperoni, onion, and garlic.

As the ground meat cooks, sprinkle in the seasonings. Taste (when cooked!) and add more to your liking if necessary.

In a large bowl, mix the warm beef mixture, spaghetti sauce, squash threads, eggs, and cheese of choice.

Place into a greased casserole dish ( I used a 9 X 9).

Top with the remaining pepperoni and a sprinkling of cheese.

Bake for 30 minutes, or until golden and bubbly.

“Elvis” Cookies

These cookie have three of my most favorite ingredients, Chocolate Chips, Bacon, and “Peanut Butter” (well actually Almond Butter). They are soft and chewy and I love the little surprise of bacon that sneaks in. The King would be very impressed! 🙂

What You’ll Need:

2 small mashed bananas

1 cup of sunflower seed butter (I used Almond Butter instead- amazing)

1/3 cup honey (I used Agave Nectar)

1 egg, whisked

1 tsp vanilla extract

1/4 tsp cinnamon

1/2 tsp baking soda

1/;2 baking powder

Pinch of sea salt

1/2 cup Enjoy Life Chocolate Chips

3 strips of bacon, cooked and diced

What To Do:

Preheat oven to 350 degrees. Line a baking sheet with parchment paper

In a medium bowl, mix together all ingredients except bacon and chocolate chips. I used my hand mixer.

Fold in chocolate chips and bacon

Spoon mixture onto baking sheet, about 2 inches apart. Note: using almond butter made the mixture liquidy, however they thickened up when in the oven.

Bake 18-20 minutes or until golden brown

Let cool before removing from baking sheet.

Eat and Enjoy!

Paleo Zucchini Sticks

My favorite veggie is Zucchini. I would eat it every day if I could. I love that there are so many ways you can cook with it so when I found this recipe I was beyond psyched! This would make a great snack or an appetizer at a get together. Pair it with your favorite tomato sauce and you’ll have a winner.

What You’ll Need:

1 Medium Zucchini

2 Eggs

2 Tbsp Olive Oil (or coconut oil)

3 Tbsp Almond Meal

1/2 Tbsp Garlic Powder

1/2 Tsp Salt

What To Do:

Preheat oven to 425 degrees

Line a baking sheet with foil

Spread a thin layer of oil on the foil using a brush or paper towel

Slice Zucchini into match sticks

Dry off any extra moisture of Zucchini with a paper towel

Crack and beat an egg in a shallow dish

In another shallow dish, combine almond meal, garlic powder, and salt. (You may need to add more depending on how thick you coat the sticks.)

Coat the Zucchini in egg and then in the flour mixture.

Lay out zucchini on the baking sheet

Bake 12-14 minutes

Turn over and then bake another 12-14 minutes

Eat and enjoy

Don’t Cave In: Paleo Zucchini Sticks

Clean Eats – Orange Julius

Who doesn’t love to treat themselves to an Orange Julius every now and then, but how about if you could make it at home? I found this recipe from Cassey over at Blogilates! It has been the perfect mid afternoon treat for me.

What You’ll Need:

1 Banana Sliced and Frozen

1/2 Orange Juice (I used the Simply Orange)

3/4 Unsweetened Almond Milk

Handful of ice

What To Do:

Combine all ingredients into a blender or Magic Bullet

Blend until smoothie like

Drink and enjoy!
